1Roughly cut up large onions and put in a blender with garlic cloves , Salt and the juice of a lemon . Blend until smooth.large onions: 2, garlic cloves: 4, Salt: 1 tbsp, lemon: 1

2Cover the bone in mutton in the onion puree and marinate overnight.bone in mutton: 1 kg

3The next morning, add the mutton and marinade to a slow cooker and set to low. Add dried figs , dried apricots , prunes and dates{1%handful}.dried figs: 1 handful, dried apricots: 1 handful, prunes: 1 handful

4Mix together hot smoked paprika , sweet smoked paprika , ground black pepper , ground turmric , ground cumin , ground coriander , ground ginger and ground mustard seeds . Add dried chillies or red chilli paste to desired heat level. In a pan heat up a small amount of oil and toast the spices till fragrant. Add to slow cooker and mix in.hot smoked paprika: 2 tsp, sweet smoked paprika: 2 tsp, ground black pepper: 2 tsp, ground turmric: 1 tsp, ground cumin: 1 tsp, ground coriander: 1 tsp, ground ginger: 1 tsp, ground mustard seeds: 1 tsp, dried chillies or red chilli paste: (optional), oil

5After ⏱️ 4 hours check the mutton. It should be soft but not quite fall of the bone tender yet. If it's not give it anouther hour.

6Add dried oregano , sumac , dried thyme and dried mint to the slow cooker and mix in. Leaver for another ⏱️ 30 min .dried oregano: 2 tbsp, sumac: 1 tbsp, dried thyme: 2 tsp, dried mint: 1 tsp

7In a dry pan lightly toast cashew nuts and almonds . Mix into the Tagine.cashew nuts: 1 handful, almonds: 1 handful
